Starting with colorful sponges from Dollar Tree, I cut several in half until I had the number of layers that I wanted.

Next, using lightweight spackle in an icing bag, I piped on enough to allow two sponges to stick together.

Stick another sponge on top of the icing and gently press into place.  You can stop here or keep layering, up to you!

To top my little cakes I added a dollop of the spackle on top...

...and then placed a faux fruit topping into the spackle before it dried.

The cherries here are holiday berries that I picked up at Dollar Tree during the holiday season, but you can find these now on Amazon.
